University catering of the Studentenwerk SH wins sustainability award

As part of the annual refectory conference on 19 and 20 September 2022 in Bochum, the nutrition organisation ProVeg awarded seven student unions from all over Germany for the first time as forward-looking Planetary Health refectories. The Studentenwerk Schleswig-Holstein is one of the award winners.

The award recognises outstanding concepts for healthy plant-based catering that protects the planet. It is intended to serve as an inspiration for the catering industry as a whole. In addition to Schleswig-Holstein, the winners of the sustainability award are the canteen locations Erlangen-Nuremberg, Frankfurt (Oder), Göttingen, Mannheim, Osnabrück and Potsdam. They convinced with a vegan offer that is as varied as it is healthy, inexpensive and climate-friendly.

"We are very happy about the award," says Kristin Dahl, deputy university catering manager of the Studentenwerk SH. "We have already been committed to sustainability for many years and have continuously increased the proportion of vegan dishes in recent years." Sales of vegan dishes were 45 per cent of all dishes sold in the summer semester of 2022. According to Dahl, the high demand is also related to the significant increase in climate and health awareness during the pandemic. "We assume that this awareness will continue to grow in the future. Vegan means less CO2, less livestock farming and less waste of resources."

The Planetary Health Mensa award is based on the Planetary Health Diet developed by the EAT Lancet Commission in 2019. The sustainable diet for the benefit of the planet prioritises legumes, whole grains, fruits, vegetables, nuts and seeds. In turn, it contains few highly processed - and few animal products.
